Crying Tiger Sauce

Ingredients


  • 1 tbsp fish sauce

  • 2 tbsp BHT tamarind concentrate

  • 1 tsp palm sugar (or brown sugar)

  • 1 tbsp chili flakes

  • 1 tbsp toasted rice powder (optional)

  • 1 tbsp sliced shallots (optional)

  • 1 tsp chopped green onions or cilantro stems

Preparation

Step 1


  1. Stir together fish sauce, BHT tamarind concentrate, and palm sugar until fully dissolved. (you may need to melt the palm sugar by putting them in the microwave for 30 seconds).


Step 2


  1. Add chili flakes, rice powder, and shallots. Mix well. (To make the rice powder, you can roast them on the pan until the rice turns brown, then take them out to a mortar and crush them into powder).


Step 3


  1. Top with green onions. Serve with grilled meat or sticky rice.
